Description
Unused Mozarella Batch Cooking Stretching Machine - Dima Compact 100C-S, type: 15100. Compact unit for continuous curd cutting and cooking-stretching of any kind of “pasta filata” stretched cheese such as mozzarella, fior di latte, mozzarella di Bufala, pizza-cheese, provolone, scamorza, chechil, suluguni, ostiepock, parenica, oaxaca etc. Capacity: up to 100 kg/h depending on product dimensions, moisture content and product properties. The curd blocks are manually fed into the hopper of the curd cutter and shredded by rotating the disc-mounted knives. The product is fed in from above and the knives repeatedly shred the lower part of the curd block. The weight of the cheese block exerts the necessary pressure on the knife blades. The curd slices from the curd cutter enter the machine's cooking and kneading tank. The product is kneaded by the mechanical movement of the kneading arms, which mimic the manual movements of the cheesemaker in traditional cheese production. In the kneading section, the input and quantity of scalding water supplied by an external water heater (excluded) can be regulated. A screw conveyor for end product transport (excluded) and a forming roller with honeycombs (excluded) are designed for the production of spherical mozzarella or other products. The machine is made out of stainless steel AISI 304 and all the parts that come into contact with the product are treated with multi-layer Teflon Duroflon K3 black (PTFE).
