Description

Magyar / Hungarian Dairy Experimental Institute Ltd. Microfiltration (MF) Plant for Skim Milk which is designed for the fractionation of skim milk and was previously operated in a European dairy. The MF process selectively separates micellar casein from serum components such as whey proteins, lactose, and soluble minerals. The system is equipped with an integrated diafiltration (DF) stage to enhance the purity and functional properties of the casein-rich retentate. During microfiltration, skim milk is circulated across the membranes. Larger components, including micellar casein (and residual fat or bacteria), are retained as retentate, while smaller components—water, lactose, salts, and minerals—pass through the membrane as permeate. In the diafiltration step, fresh water is continuously added to the retentate while filtration proceeds. This “washing” of the casein micelles promotes the further removal of dissolved low-molecular-weight components without loss of the desired high-molecular-weight fraction. The added water dilutes the retentate, allowing lactose and soluble minerals to diffuse through the membrane, while micellar casein remains concentrated in the retentate. Key advantages of the system is efficient removal of lactose, enabling the production of low-lactose or lactose-free casein ingredients, reduction of soluble mineral content and production of high-purity micellar casein with improved functionality and processability.
