Stephan universal machine for producing processed cheese, convenience products, vegan spreads and confectionery. Formerly used in melted and cream cheese production (also vegan). Machine bowl with top slide and a bottom valve, lid and side covers are all made of stainless steel. Machine frame made of painted steel. The bowl is equipped with double jacket for heating/cooling on the jacket including all valves, 4x direct steam nozzles for direct injection of (culinary) steam into the product, temperature sensor in the product, 3x double cutting knives, max. working pressure in the bowl -1 / 0.3 bar (protected with pressure relief valve), maximum temperature in the bowl 95 °C, bowl volume: 300 liters, 1x hydraulic inlet slider at the top for the main product, including large up and down movement funnel (hydraulic), 1x outlet valve at the bottom for the outlet of the finished product, 1x connection for pneumatics controlled ingredient valves on the side of the bowl (including pneumatic valve). Double-walled lid with scraper on the wall (electric drive ± 25 rpm), vacuum tank on the lid and 2x manual tension clamps. Main engine for the 3x cutting blade: 400 volts - 50 Hz - 50 / 58 kW - 2-speed motor - 1,480 / 2,965 rpm. Hydraulic system to control the hydraulic slides. vacuum pump. Water feed system (E&H). Control panel with Siemens S5 PLC control. Elevator for loading
